Ingredients
200 g tamarind
400 g sugar 2 cups
600 ml water 2.5 cups
1 tbsp grated ginger/ ginger juice
1 pinch salt
2-3 tbps roasted sesame seeds and roasted peanuts
Instructions
Step 1: In a small medium saucepan, combine the tamarind pulps, water and sugar. Bring to a boil over medium high heat. Use a spoon to break the pulps. When it boils, lower the heat to medium low and simmer for 15 minutes until thickened. Add grated ginger and salt. Cook for a few more minutes and turn off the heat.
Step 2: The tamarind mixture will get thicker (like jam) when it cools down. Add roasted sesame seeds and store in a jar in the refrigerator. It can be kept for a few months.
Step 3: To assemble the drink, fill the glass two thirds full with crushed ice. Add a few teaspoon tamarind jam and top up with roasted peanuts. Add water to dilute. Stir well and enjoy!
