The material is obviously pigs purchased in ethnic villages. The indigenous people grow numerous pigs in traditional method. The pigs do not eat processed pellet food or weight gaining food but mostly find the food by themselves and a small portion is provided. Their food is mostly from vegetables and tubers or root…The ethnic pigs move a lot and their pork has firm muscle flesh. The weight of each pig is from 15 to 20 kilograms. If having the demand to sell, the farmers will bring the products to the market and negotiate the price with purchasers. If the purchasers do not want to buy pork in the market, they can come directly to the ethnic village and choose the favorite ones.
On the road to Gia Long waterfall, the guests can visit the village to buy pigs and ask an indigenous person to follow them home to process the food as well as kill the pigs quickly and professionally. The giant kiln is erected and the dry forest trees are collected to burn into embers. The pigs are cleaned and processed. The bowels are placed on the kiln until turning into yellow color, being fragrant. The native people tend not to mix the pork with many spices and even any spices to remain the original taste of the material.
The roasted pork is taken down from the kiln, cut into smaller pieces and enjoyed. The roasted pork is not fatty and very safety. Seating beside the blue waterfall, enjoying this food is the most wonderful moment in life.
